Every other year, our family purchases ¼ (or even 1/3) of a cow from a ranch up in the northern part of our state. This leads to us obtaining HUNDREDS OF POUNDS of fresh, organic, grass-fed, American Wagyu beef for around $5-$6/pound. No joke guys, it comes to us butchered, packaged, frozen, and ready to fill up our freezer. It is potentially the BEST regular investment we make, and you best believe we monitor our freezer thermometer regularly to make sure there are no mishaps.
This also leads to us trying to find random beef recipes when we have no idea what else to throw together for dinner. Steak cuts are easy. Stew meat is perfect for beef stroganoff and random stews and soups. Carne asada = tacos on the Blackstone. Ground beef…well, that’s an endless possibility. Sure, we love our brown sugar meatloaf in this house (recipe to be filmed and posted soon), but what about those busy nights when we need something on the table in less than half an hour? Let’s be real guys, my husband and I have been known to eat this ground beef with JUST SPG, it’s that good. So, you can imagine how good it is when we actually “recipe” it. This is why our go-to beef and rice bowls have been so beneficial for us: it’s like a burrito in a bowl, it whips up in a jiffy, and it’s filling!
Super Easy Beef and Rice Bowls
Prep Time: 15-20 minutes
Post Time: Nothing, really. Maybe 5 minutes for toppings.
Serves: 6-8
INGREDIENTS:
- 1.5-2 cups of white rice
- 1 lb of ground beef
- 1-2 tbsp of minced garlic
- Salt/pepper as preferred
- (1) 15oz can of mild chili beans
- Frozen corn or (1) 15oz can of sweet corn (drained)
- Optional: Chopped onions, green chiles, maybe even some bell peppers!
- Toppings: Cheese, tortilla chips, tomatoes, avocados, sour cream, etc.
THE PROCESS:
- Prep your rice cooker (and the white rice listed above, with water) before you do anything else. That way, your rice will be done right around the time the beef is finishing up
- Throw your ground beef into a frying pan (use a little bit of oil if you’re using super lean beef) along with the salt and pepper for seasoning. If you are using onions or bell peppers, chop those up and throw them in along with the beef to get everything softening from the get-go
- With about five minutes left to go on the beef, throw in your desired amount of mixed garlic and toss it around a bit
- One the beef is nearly cooked, toss in those chili beans (full can, with the sauce) and that corn. The green chiles would go in now if you’re using those. Assimilate everything and finish cooking the beef. Let this mixture simmer on low-medium for a bit, or until your rice is done
- Start building your bowls. Layer the rice and then the beef, then go for your desired toppings
- ALL DONE! Easy as pie.
